Brewing

UB offers a number of services to the brewing and related industries. These range from short training programs (5 days in duration), accredited qualifications, research and contract brewing.

The training programs include our well-established short course in malting and brewing, sensory evaluation of beer (from beginner to expert) and programs specifically targeted at craft brewers where brewers and potential brewers can be trained using the latest in technology from DME Brewing Systems. We also offer a Bachelor of Applied Science (Food Science and Technology), a Bachelor of Business (Brewing Studies), a Graduate Certificate and Graduate Diploma of Brewing as well as honours and higher degrees in brewing (master’s and PhD).

UB has a fully licensed, commercial microbrewery. The brewery has a capacity of 600 litres and beer can be packaged in 10, 20 or 50 litre kegs. If you are a club, social club, licensed premises (for example a restaurant or hotel) and would like to have a product brewed to your specification or have us design a beer for you, we would be happy to discuss your requirements. This is a great opportunity to individualise the beer you sell with a unique Ballarat product.

Conferences

UB can customise packages to suit the specific needs of its clients. All aspects of conference organisation can be arranged including accommodation, catering and transport. UB offers a plethora of environments within which to host your next conference including the newly refurbished Caro Convention Centre featuring the 1870 Founders Theatre, Studio Theatre, and meeting rooms.

SMB Campus, situated in the centre of Ballarat’s central business district, offers the Brewery Lecture Theatre with state-of-the-art audiovisual and computer systems and is an ideal facility for presentations for up to 120 people. A large exhibition space is available for hire which has been utilised by organisations for trade fairs and markets. Meeting rooms are also available and catering can be arranged.

Arts Academy theatres, studios and galleries are available for hire and offer high-end, professional production facilities. Camp Street’s new buildings house modern accommodation facilities with outstanding views for booking during lecture breaks.

Cookery

Certificate III in Hospitality (Commercial Cookery) is an apprenticeship course and reflects the role of a qualified cook preparing meals in a commercial cookery/catering environment. Successful completion of the Certificate III in Hospitality (Commercial Cookery) will provide the student with a trade-based qualification, subject to completion of required on the job hours.

Events

The Certificate III in Meetings and Events reflects the role of those meetings and events staff who play a support role to supervisors and managers. Units cover the unique events working environment, tourism industry and event knowledge, office procedures, business technology, financial transactions, conflict resolution, booking and co-ordinating supplier services and event registration.

Food and meat processing

The School of Manufacturing Services has been involved on a national basis in the provision of customised training for the Food and Meat Industry sectors. A large proportion of this workplace training has been characterised as ‘existing worker’ traineeships, with delivery occurring between the Certificate II and IV levels. Apprenticeship training is also available in the food processing area with particular relevance to retail baking.

The School has developed a reputation for being flexible and creative in the upskilling of employees. A range of short courses in food technology are available to provide valuable qualifications for leading hands, supervisors, technical assistants and food operators that wish to build on their current knowledge and skills.

Food science

The Food Science group in the higher education sector prepares students for careers related to the food industry. Studies cover the food continuum from the raw product to the consumer including food processing, product development and marketing, and quality assurance, with particular strengths in food analysis and fermentation technology. The Food Science group is actively involved in research in a number of areas including chemical and biochemical analysis of malt, novel technologies in the brewing process, predictive microbiology, lipid degradation, natural antioxidants, tree nuts and fermented foods.

Function and catering facilities

The newly renovated dining complex at UB’s Mt Helen Campus has three interconnecting dining areas with capacities of 300, 140 and 150, providing total seating for 590. Fully licensed bar facilities service these areas. The experience of UB’s catering department allows for tailored menus to suit conference needs. The SMB Campus ‘Prospects Restaurant’, in the heart of Ballarat, also provides an excellent location for functions.

Health support services

The Certificate III in Health Support Services is delivered as a Traineeship program suited to cleaners, domestic assistants, hospital assistants and housekeeping assistants. It is offered on a part-time basis over one to two years combining off and on the job training and assessment. It reflects the role of an employee undertaking routine internal and external cleaning tasks in healthcare settings. This course includes requirements for effective work in the health industry, compliance with infection control policy and working safely.

Hospitality

UB has a strong and enviable reputation in the provision of commercially sponsored hospitality training and assessing, much of which is undertaken within the customer’s workplace. The School of Business Services offers a pathway of training solutions, including the Certificate III in Hospitality Operations, Certificate IV in Hospitality Supervision; and the Diploma, and Advanced Diploma of Hospitality Management.

Hospitality Management

Diploma or Advanced Diploma of Hospitality Management. This course will equip you with skills and knowledge to act as supervisor/middle manager in any functional area of the hospitality industry.

Certificate III in Hospitality (Operations) is a course which is delivered as an on the job traineeship. The Certificate III in Hospitality (Operations) course will qualify you to undertake a range of operational activities with in the Hospitality industry. Successful completion of the Certificate III in Hospitality (Operations) will provide you with the skills and knowledge required of a skilled operator. Employment opportunities include positions in food preparation, food and beverage service, barista service, gaming attendant, front office attendant, concierge, and housekeeper.

Ecotourism is nature-based tourism, involving education about the natural environment to ensure that activities are ecologically supportive. The Diploma of Tourism (Operations Management) is a joint initiative of the William Angliss Institute of TAFE and the University of Ballarat, SMB Campus, to provide training for people seeking employment in the field. The Diploma aims to develop business, communication and scientific skills which will enable people to work in a range of occupations in this field, (eg. interpretive tour guiding, specialist tour operations, parks and wildlife areas and government departments). The Diploma is also suitable for people planning to establishing a small business in Ecotourism.
